Soft, tender, and delicious cake with jam. Breakfast is my favorite moment of the day! A new day full of expectations, meetings, smiles, and many beautiful things begins. Because I always prefer to be positive and ready to embrace all the good life can bring. And if at breakfast we find a homemade, genuine cake along with my indispensable cup of milk and coffee, I’m sure my day will be wonderful! The cakes I prefer are always the simple ones, the soft and tender cakes that remind me of those prepared with few and simple ingredients. The recipe I want to tell you about today is that of a Soft Cake with Apricot Jam that is very easy to prepare. I simply added the jam before baking, distributing it with the help of a piping bag, and during baking, it sinks into the dough creating a Soft and Tender Filled Cake. Ingredients for the Cake with Jam
- 2 eggs
- 1/2 cup sugar
- 1 1/2 cups flour
- 1/4 cup butter (melted)
- 1 jar plain yogurt (125 grams)
- 1 cup apricot jam (or another flavor)
- 1 orange zest (untreated)
- 1/2 packet baking powder (8 grams)
- 3 tbsps sugar sprinkles
- to taste powdered sugar (for decoration)
What You Need to Prepare the Soft Cake with Jam
- Piping Bag
- Baking Pan
- Mixer
How to Prepare the Cake with Apricot Jam
Beat the eggs with the sugar using an electric mixer for 7-8 minutes until the mixture is light and fluffy.
Add a jar of plain yogurt and the melted butter.
Also add the grated zest of an untreated orange and mix well.
Finish the preparation by adding the sifted flour and baking powder. Mix.
Pour the batter into a rectangular baking pan, mine measures 8.5 x 11 inches, oiled or lined with baking paper. Level well with a spatula.
Transfer the apricot jam into a piping bag with a wide, smooth nozzle. Distribute the jam over the batter making vertical and horizontal stripes as if drawing a grid.
Sprinkle sugar sprinkles over the surface. Bake the Cake with Jam in a preheated static oven at 350°F for 35-40 minutes.
Always do the “toothpick test” to check the inside is cooked. Let it cool and sprinkle with powdered sugar if desired.

Loredana’s Tips
If you prefer, you can substitute the butter with 50 ml of seed or rice oil. You can replace the yogurt with 110 ml of milk, either cow’s or plant-based.
With the same quantities, you can also choose to use a round pan with a diameter of 9.5-10 inches.
Bake the Cake immediately after distributing the jam on the surface, before it starts to sink inside.
The Cake remains soft and tender in a container for 2-3 days, but it will surely be gone much sooner!
