- 1.4 oz grated parmesan cheese
- 2.5 oz breadcrumbs
- 1 bunch parsley
- to taste extra virgin olive oil

How to prepare Oven-Baked Cauliflower Meatballs
Clean the cauliflower by removing the outer leaves and the harder central stalk. Cut it into florets and transfer them to a colander. Rinse them under running water and let them drain.
Cook the cauliflower in boiling water for about 14-15 minutes. Test the cooking by piercing with a fork. Drain and let it cool in a bowl.
Using a potato masher, puree the cauliflower. Add a pinch of salt, a pinch of pepper, chopped parsley, and 4-5 tablespoons of breadcrumbs. Mix with a fork.
With slightly damp hands, form the meatballs. Take a bit of mixture and roll it between your hands. Coat the meatball in breadcrumbs and place them on a baking sheet lined with parchment paper.
Prepare all the Cauliflower Meatballs in the same way until you finish the mixture. Oil the meatballs on the surface and let them cook in a hot oven at 375°F for 18-20 minutes.
