Chicken and potato burger a tasty and delicious second course. The recipe I want to share with you today is for exquisite Chicken Burgers. Easy to prepare and delicious even for stuffing a sandwich, perhaps with the addition of a few lettuce leaves or tomato slices. To prepare them, you only need a mixer and the special press to make burgers, but if you don’t have them, you can simply use a pastry ring or a cup to give them a round shape. I always prepare them in advance and freeze them so that they are ready when needed. Ingredients for Chicken and Potato Burgers

  • 10.6 oz chicken breast
  • 10.6 oz potatoes
  • 2 carrots
  • 1.4 oz grated Parmesan cheese
  • 1 egg
  • 2.1 oz breadcrumbs
  • 1 bunch parsley
  • 1/2 teaspoon salt

  • Potato Masher
  • Burger Press

How to prepare Chicken and Potato Burgers

  • Peel the potatoes and carrots; cut them into pieces. Cook the potatoes and carrots in boiling water: first add the potatoes and after 10 minutes the carrots, which cook faster. Let them cook for about 25 minutes, checking doneness with the tines of a fork. Drain and let them cool.

  • Place the diced chicken breast and boiled carrots into a mixer. Mash the boiled potatoes into a puree in a bowl using a potato masher. Combine the chicken with the carrots and mix.

  • Add a pinch of salt, an egg, chopped parsley, and grated Parmesan cheese. Mix well and finally add 4-5 tablespoons of breadcrumbs, mix well to obtain a soft but not sticky dough, if needed add more breadcrumbs.

  • Now form the Chicken and Carrot Burgers. Divide the mixture into 6 parts and, using the appropriate press dusted with breadcrumbs, prepare the burgers. Pass them in breadcrumbs on all sides as you make them. I simply cooked them in a pan with a little olive oil, but you can also bake them or simply grill them.
