Ingredients for Chicken with Pumpkin
- 14 oz chicken breasts
- 14 oz pumpkin
- 1.35 tbsp extra virgin olive oil
- 1 onion (small)
- 2.8 oz flour
- 3.4 tbsp milk
- 1.05 oz Grana Padano cheese, grated
- to taste salt
- 1 sprig rosemary

How to prepare Chicken bites with pumpkin cream
Clean the pumpkin by removing the skin, seeds, and internal filaments. Cut it into small cubes. Pour 2 tablespoons of extra virgin olive oil, the sliced onion, and the pumpkin into a large pan. Slightly salt and let cook over low heat for about 10 minutes, also adding half a glass of water, stirring often with a wooden spoon.
Transfer most of the pumpkin into the glass of an immersion blender, keeping some whole pumpkin cubes to finish the dish. Add the grated cheese and a few tablespoons of cow’s milk or even plant-based milk and blend to obtain a pumpkin cream.
Cut the chicken breast into bites. Pour the flour into a bowl and coat the chicken bites on all sides. Pour 3 tablespoons of oil into the same pan where you cooked the pumpkin and let the chicken bites brown on all sides over medium heat.
Also add the pumpkin cream, the reserved pumpkin cubes, and rosemary to the pan. Adjust the salt and flavor over medium heat for 2 minutes, stirring with a wooden spoon.
The extra idea: once cooked, transfer the Chicken with pumpkin to a baking dish, sprinkle with grated cheese and let it gratin in the oven at 375°F for 5-6 minutes
