Ingredients for Chicken Cutlets with Potato Coating

  • 4 slices chicken breast
  • 14 oz potatoes
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • as needed extra virgin olive oil
  • 1 tbsp herbs
  • as needed salt

How to Prepare Chicken in Potato Crust

  • Peel the potatoes. Wash them and cut them into cubes. Cook the potatoes in boiling water for 20-25 minutes. Test the cooking by piercing them with a fork.

  • Drain the potatoes and mash them with the help of a potato masher.

  • Add a pinch of salt, chopped herbs, and grated Parmesan cheese. Mix well.

  • Sprinkle the work surface with breadcrumbs. Press a pile of potato mixture on top. Place a thin slice of chicken breast on top.

  • Cover with more potato mixture. Press to cover the slice of chicken. Sprinkle the surface with breadcrumbs.

  • Prepare all the Chicken Cutlets in the same way and place them in a baking tray lined with parchment paper. Oil them on the surface.

  • Cook the Chicken breaded with potatoes in a static hot oven at 375°F for 20-22 minutes.
