Ingredients for Pan-fried Chicken Breast
- 1.1 lb chicken breast (thin slices)
- 7 oz mozzarella
- 1 2/3 cups cherry tomatoes
- 1 clove garlic
- as needed extra virgin olive oil
- 1 teaspoon oregano
- as needed salt
- 1 sprig basil
How to prepare Chicken Rolls with Cherry Tomatoes
To prepare this recipe you need thin slices of chicken breast. If necessary, make them thinner with the help of a meat mallet. Lay the slices on your work surface and place a slice of mozzarella on each slice.
Roll the meat to form a little roll and secure it with a wooden toothpick. Prepare them all the same way. Pour 3-4 tablespoons of extra virgin olive oil and one clove of garlic into a pan. Add the chicken rolls and let them brown over medium heat for 4-5 minutes.
Wash the cherry tomatoes and quarter them. Add the cherry tomatoes to the pan. Season with salt and add the oregano. Turn with a wooden spoon and cover the pan with a lid. Let cook over low heat for 4-5 minutes. At the end of cooking, remove the garlic clove and add a few basil leaves.
