The recipe I want to tell you about today is that of a delicious and flavorful main course with thin slices of chicken breast wrapped in speck, stuffed with spinach and cheese, and baked in the oven. A perfect main course that has won over my small family and a different and special way to cook simple chicken breast slices in a delicious way. Tasty Chicken Rolls baked in the oven or in an air fryer perfect for winning over relatives and friends, and you can easily prepare them in advance and store them in a container in the fridge without cooking them or even freeze them to have them ready to cook. I added some more flavorful slices of speck that I find pair well with the sweetness of the chicken, but if you don’t like the slightly smoked taste, you can replace it with cooked ham. Ingredients for Oven Baked Chicken Rolls
- 1.1 lbs chicken breast (in thin slices)
- 4.2 oz speck
- 8.8 oz spinach, cooked, boiled
- 7.1 oz scamorza (in slices)
- 1.1 oz grated Parmesan cheese
- 1.4 tbsps extra virgin olive oil
- to taste salt
- 2 sprigs rosemary
How to Prepare Chicken Rolls with Speck
To prepare this recipe you need thin slices of chicken breast. If they are not thin enough, further thin them out with a meat mallet. For the spinach, you can use either fresh or frozen spinach boiled in a little water or cooked in the microwave.
Lay the slices of chicken breast on the work surface. Lightly salt them. Place a slice of scamorza or other soft and melting cheese on each slice of chicken. You can also simply use cheese slices.
Place a mound of cooked and squeezed spinach on the cheese. Roll the chicken breast to form the rolls. Wrap each chicken breast roll with a slice of speck. Prepare all of them in the same way.
Place the Chicken with speck and spinach in an oiled baking dish. Oil the surface. Cover them with grated Parmesan cheese and a sprig of fresh rosemary or chopped rosemary.
Cook the Chicken with spinach and speck in the preheated oven at 375°F for 20 minutes. If you prefer, you can cook them in the air fryer at 375°F for 14-15 minutes. Serve them with Crispy Potatoes in a pan, and they will be perfect!

If there’s leftover chicken, store it in a container in the fridge for 1-2 days.
