For the peas I used frozen peas much more practical and with fast cooking, but you can also use fresh peas when they are in season or canned ones to add only at the end of cooking. Ingredients for Chicken Bites with Peas
- 14.11 oz chicken breast
- 2.82 oz speck
- 8.82 oz peas (frozen)
- to taste extra virgin olive oil
- 1/3 cup flour
How to prepare Chicken with peas and speck
You can use chicken bites or simply cut chicken breast into small pieces. Pour the chicken bites into a bowl and add the flour. Mix with 2 tablespoons to coat all the pieces of chicken with flour.
Pour 3-4 tablespoons of extra virgin olive oil and the chicken strips into a pan. Let the chicken brown on all sides over medium heat, turning it often with a wooden spoon. Add the peas to the pan. Stir over medium heat for 2 minutes and add half a glass of water.
Lower the heat and let it cook for 7-8 minutes. Add the speck cut into strips and mix. Let it flavor for another 2 minutes.

If there is leftover chicken, store it in the fridge in a container for 1-2 days
I didn’t add salt because the speck is already quite flavorful
I used peas that have very fast cooking, but if your peas are not cooked in the indicated times, continue cooking for a few more minutes
