Ingredients for Chicken with Pumpkin
- 1.1 lbs chicken breast
- 14 oz pumpkin
- 1 white onion (medium)
- 1/3 cup flour
- to taste extra virgin olive oil
- 1 sprig rosemary
- to taste salt
- 1 to taste pepper
How to prepare chicken with pumpkin
Clean the pumpkin by removing the skin, seeds, and internal filaments. Then cut it into cubes. Cut the chicken breast into bites. Coat the chicken bites in flour.
Pour 3 tablespoons of olive oil into a pan. Heat over medium flame and add the chicken bites to the pan. Let them brown well on all sides, turning them with a wooden spoon. Transfer the chicken to a plate.
In the same pan where you cooked the chicken, pour 2-3 tablespoons of oil. Add the cleaned and thinly sliced onion and the pumpkin. Sauté for 2-3 minutes over medium flame. Season with salt and add a few tablespoons of water. Let the pumpkin cook over medium flame for 10-12 minutes, turning it often with a wooden spoon.
Mash the pumpkin into a cream simply by pressing it with a fork. Add the chicken bites you cooked to the pan with the pumpkin cream. Stir to combine, and also add some sprigs of rosemary and a pinch of pepper. Let it flavor for a few minutes. Serve
