Chicken with zucchini in the pan for a main course that wins everyone over at the table. The season of my beloved zucchinis is starting, so they can’t be missing from my fridge, and today I bought a kilo at the market. The recipe I want to tell you about today features tender chicken breast and, of course, zucchini. A simple and quick main course to prepare and so delicious. I cooked the zucchini in the pan first and then the chicken breast bites and then combined them by adding some spreadable cheese for an ultra-creamy dish. A main course already together with its side that was really enjoyed at my house, even by the little one who doesn’t particularly like zucchinis. Ingredients for Chicken bites with zucchini
- 14 oz chicken breast
- 1.1 lbs zucchini
- 1/3 cup flour
- 1/3 cup grated parmesan
- 4.2 oz cream cheese (like Philadelphia)
- to taste extra virgin olive oil
- 1 clove garlic
- to taste salt
- 1 pinch pepper
How to prepare Chicken with zucchini
Wash the zucchinis, trim the ends, and cut them first into 3-4 parts and then into smaller pieces, but not too small. Pour 2-3 tablespoons of extra virgin olive oil into a large pan. Add the garlic clove and the zucchinis.
Let the zucchinis cook over medium heat for 8-10 minutes, stirring often with a wooden spoon. Transfer the zucchinis to a plate and remove the garlic clove.
Cut the chicken breast into bites and coat them well with flour. Cook the chicken in the same pan where you cooked the zucchinis, adding 3 tablespoons of extra virgin olive oil. Stir over medium heat to brown them well on all sides.
Add the zucchinis back into the pan with the chicken. Adjust the salt. Add the grated parmesan and cream cheese. Stir and let cook for another 3-4 minutes over low heat. At the end of cooking, if you like, add a pinch of pepper.

Loredana’s Tips
If there’s leftover chicken, store it in a container in the fridge for 2 days. You can reheat it in the microwave or in a pan, adding a few tablespoons of milk.
If you prefer, you can replace the creamy cheese with 100 ml of cooking cream or fresh liquid cream. If you want to make a lactose-free dish, you can replace it with plant-based milk like rice or soy milk.
