Chocolate and ricotta truffles so good you can eat them in one bite. Christmas is just around the corner, and I continue to give you some ideas for a simple and quick treat, perfect to prepare in advance. Just like the recipe I want to share with you today: delicious and indulgent Chocolate Truffles with a filling of ricotta and cookies. For the cookies, I used chocolate chip cookies but you can choose the ones you prefer, be they plain cookies or chocolate cookies or even whole-grain cookies. Prepare them in advance for a sweet treat to offer to family and friends or a wonderful idea for a special little gift, perhaps packaged in transparent bags and tied with a colorful ribbon. Ingredients for Chocolate Truffles

  • 4 oz dark chocolate
  • 7 oz ricotta
  • 7 oz cookies
  • 3 tbsps rum

How to prepare the Chocolate and Ricotta Treats

  • To prepare the Truffles, I prefer to coarsely crush the cookies with my hands or a meat mallet so you can feel some pieces. But if you prefer, you can also crush them more finely using a mixer.

  • Mix the cookies with the ricotta and rum in a bowl. With slightly moistened hands, form small balls the size of a cherry. Place them on a tray and let them set in the fridge for an hour.

  • Melt the dark chocolate in small pieces in a double boiler. Use 2 teaspoons to dip the balls into the melted chocolate. Gently remove them and then let them set on a tray lined with foil.
