How to prepare Christmas star cookies
You can prepare the shortcrust pastry by hand or with the help of a mixer. Mix the flour with the butter in small cubes and the sugar in a bowl. Then add an egg, cinnamon, ginger, and the grated zest of half an untreated orange.
Knead well until you get a soft but not sticky dough. Form a ball, wrap it in plastic wrap, and let it rest in the fridge for at least 30 minutes.
Take the dough and roll it out on a floured work surface to a thickness of 1/8-3/16 inch. Use a star cutter of your preferred size to cut out the cookies. As you make them, place them slightly apart on a baking tray lined with parchment paper.
Bake the Star Cookies in a preheated oven at 338°F (170°C) on static mode for 16-18 minutes. Let them cool.
Melt the dark chocolate in small pieces in a double boiler or microwave. Dip half of the cookies in the melted chocolate and place them on a tray lined with foil. Before the chocolate dries, decorate with pistachio crumbs. Let the chocolate dry.

How long do the cookies last?
The cookies last in a container or food bag for 3-4 days. If you want to keep them longer, I suggest not dipping them in chocolate immediately but doing it later.
