With these quantities, I used an 8-inch diameter cake pan, and my Sponge Cake is very tall, but even using a 9-inch pan, it turns out great, just slightly shorter

For perfect results, you can add half a packet of baking powder to the flour

You can prepare the cake in advance and store it for 2 days before filling it, either in a container or simply wrapped well in plastic wrap
