Ingredients of Coffee Tartlets
- 5.6 oz Digestive cookies (or dry cookies)
- 5 tbsps butter
- 7/8 cup heavy whipping cream
- 1/2 cup powdered sugar
- 2 espresso cups coffee
- 1 tbsp instant coffee
- 3.5 oz cream cheese (like Philadelphia)
- 2 tbsps cocoa powder (for decoration)
What You Need
- Hand Mixer
- Muffin Molds
- Mixer
- Piping Bag
How to Prepare Cold Coffee Tarts
Prepare the cookie base. Blend the digestive cookies or simply some dry or whole wheat cookies in a mixer. Mix them in a bowl with the melted butter. With this mixture of cookies and butter, cover the bottom and sides of 8 silicone muffin molds.
Press well with the back of a spoon. Transfer the molds to the fridge and let the base set for about 2 hours. If you want to proceed faster, let them harden in the freezer for 30 minutes. Once they are hardened, gently unmold and transfer them to a tray.
Whip the heavy cream with the addition of powdered sugar, instant coffee, and 2 cups of coffee. Also, add the cream cheese like Philadelphia and mix well. Transfer the coffee cream to a piping bag with a star nozzle.
Fill the base of the Coffee Tarts with the coffee cream in concentric circles. Prepare them all the same way. Dust with cocoa powder and decorate with some coffee beans. Store the Coffee Tarts in the fridge until serving.
