How to prepare Cold Pasta with Cherry Tomatoes
Cook the pasta, using your preferred shape, in abundant salted water. Drain it al dente and quickly pass it under cold water. Drain it well, transfer it to a bowl, and let it cool.
Wash the cherry tomatoes. Cut 2/3 of the cherry tomatoes in half and place them in the glass of an immersion blender. Add a pinch of salt, basil leaves, and 3 tablespoons of extra virgin olive oil. Blend to obtain a delicious cream.
Dress the now cold pasta with the cherry tomato cream. Add the remaining cherry tomatoes cut into 4 parts, the mozzarella balls, and sliced black olives. Mix and let rest in the fridge or at room temperature until it’s time to serve.
