Ingredients for Oven-Baked Cherry Tomatoes

  • 1.54 lbs grape tomatoes (or other type)
  • 2 tbsp extra virgin olive oil
  • 3 tbsp brown sugar
  • 3 tbsp aromatic herbs
  • to taste salt

How to prepare Caramelized Cherry Tomatoes

  • Wash the cherry tomatoes, I used grape tomatoes but cherry or Piccadilly tomatoes are also fine. Cut the cherry tomatoes in half. Arrange the tomatoes side by side on a greased baking tray or one lined with parchment paper. Arrange them with the cut side facing up.

  • Salt the cherry tomatoes. Sprinkle them with finely chopped mixed aromatic herbs. You can use the herbs you prefer, I used oregano, thyme, basil, parsley, and marjoram.

  • Add a bit of brown sugar to each cherry tomato. If you prefer, you can replace the brown sugar with regular white sugar. Finish the preparation with a drizzle of extra virgin olive oil.

  • Bake the Confit Cherry Tomatoes in a preheated oven at 300°F in static mode for 35-40 minutes. Place the tray in the middle of the oven. If the cherry tomatoes are larger and juicier, extend the cooking time by another 10 minutes.

  • Store the cherry tomatoes in the fridge in a container for 2 days. To keep them longer, place them in glass jars and cover them with extra virgin olive oil. In this way, they will last for 14-15 days, making sure to always keep them covered with oil.
