How to Prepare Whipped Shortcrust for Cookie Press
Let the butter soften at room temperature for about an hour. Cut the butter into small pieces in a bowl. Add the grated zest of half an untreated lemon, a pinch of salt, and the powdered sugar. Beat with a hand or electric whisk for 2-3 minutes until you have a soft and fluffy butter.
Add an egg and mix. Finally, complete the preparation of the whipped shortcrust by gradually adding the sifted flour and mix well with a spatula. If you want to make Cocoa Cookies, you can replace 20 grams of flour with 20 grams of sifted unsweetened cocoa.
Transfer a portion of dough into the cookie press tube. Choose the disk you want to use. You need to literally shoot the cookies onto a non-oiled and unlined baking sheet. This way, the cookies will stick to the sheet but will detach easily once baked and cooled.
You need to position the cookie press vertically to the sheet and press firmly, even twice for larger cookies. Then lift the cookie press sharply and continue in the same way, placing the cookies slightly apart on the sheet.
Decorate the cookies as you like with smarties, sprinkles, sugar pearls, cherries, or chocolate chips. You can also add jam to the center of the cookies. Once the sheet is filled, leave it in the fridge for 15 minutes. This way, by cooling, they won’t lose their shape during baking.
If you fill 2 sheets, let them cool in the fridge and bake them one at a time, leaving the other in the fridge. Preheat the oven to 356°F (180°C). Bake the Cookies with cookie press in the preheated oven in static mode for 12-14 minutes. They should slightly brown without darkening too much. Let them cool before transferring them onto a tray.
