Ingredients for the Berry Cream
- 10.5 oz berries
- 1 cup Greek yogurt
- 2/3 cup heavy whipping cream
- 1/2 cup powdered sugar
- 16 plain cookies
- 1.4 oz sugar
- 2 tbsps lemon juice
- 1/2 glass milk
- A few sprigs mint (for garnish)
How to prepare Berry Cups
To prepare this dessert, you can use either fresh or frozen berries. If using fresh berries, wash them under running water and let them drain. Pour the berries into a saucepan, add the lemon juice and granulated sugar. Let them cook over low heat for 4-5 minutes, stirring often. Let cool.
Whip the heavy cream with the addition of powdered sugar. Add the Greek yogurt to the whipped cream, gently mixing with a spatula. Also add the berries, setting a little aside for decoration. Mix gently.
Make a layer of broken plain cookies at the bottom of 6 glasses or cups. Soak the cookies with milk. Distribute the Cream with berries over the cookies. Top with the reserved berries and a sprig of fresh mint. Store in the refrigerator.
