Just like the recipe I want to share with you today: Ultra creamy and exquisite Cheese Pasta. I chose simple penne rigate for the pasta shape, but any other shape you prefer will work just fine. You can also experiment with cheeses you like or simply use the ones you have in your fridge. It’s best to always choose at least one creamy cheese and another one more aromatic and flavorful. A very simple first course to prepare, and I’m sure it will delight everyone at the table, just like it did with my little family. Ingredients for Cheese Pasta
- 11.3 oz penne rigate
- 5.6 oz gorgonzola and mascarpone
- 1.75 oz pecorino romano (grated)
- 3/4 cup heavy cream
- 1.4 oz grated parmesan
- 5.3 oz emmental
- 2 pinches pepper
- to taste salt
How to Prepare Cheese Penne
While the pasta is cooking, prepare the sauce. Grate the parmesan and pecorino romano. Cut both the emmental and gorgonzola into small pieces. Pour the heavy cream into a saucepan.
Add all the cheeses to the saucepan and let them melt over low heat, stirring with a whisk or a wooden spoon. Cook the penne, or other pasta shape, in plenty of salted water.
Drain the pasta al dente and place it in a bowl. Add the cheese sauce you prepared and mix well. Serve the Cheese Pasta with a sprinkle of ground pepper.

Loredana’s Tips
If you prefer, you can replace gorgonzola with mascarpone with classic gorgonzola and the emmental with asiago, brie, caciotta, or smoked scamorza
You can also substitute the heavy cream with milk or cooking cream
Try pouring the dressed pasta into a baking dish and simply gratin it in the oven at 392°F for 7-8 minutes, and it will be love at first bite
