Ingredients for Zucchini Meatballs
- 1.1 lbs zucchini
- 4 slices white bread
- 1/3 cup grated Parmesan cheese
- 1 egg
- 1/2 cup breadcrumbs
- 1 bunch parsley
- to taste salt
- to taste extra virgin olive oil

How to Prepare Zucchini Meatballs in an Air Fryer
Wash the zucchinis. Trim the ends and shred them into thin strips using a large-hole grater. When finished, squeeze the zucchinis with your hands to remove all the water inside and transfer them to a bowl.
If preferred, you can grate the zucchinis onto a cloth, close the cloth, and squeeze.
Add a pinch of salt, the egg, grated Parmesan cheese, chopped parsley, and the slices of white bread finely crumbled by hand. Mix the mixture well with a fork. If it’s too soft to form the meatballs, add 2-3 tablespoons of breadcrumbs and mix.
Form the meatballs. Take a small amount of mixture and compact it between your hands into a round shape. I flattened them slightly. As you prepare them, roll them in breadcrumbs on all sides and then place them on an oiled tray or lined with parchment paper.
Oil the surface of the Meatballs. Cook Zucchini Meatballs in the air fryer at 365°F for 15-16 minutes.
Bake at 375°F for 16-18 minutes

If you prefer, you can cook the Meatballs in a pan with a little oil or fry them.
