CRISPY AND FLAVORFUL BAKED FENNEL AND COD

Baked fennel and cod, a simple and delicious main course. This year I have become literally obsessed with fennel! I’m preparing it very often and always with a new recipe, just like the one I want to tell you about today. For lunch, I wanted to prepare cod fillets with fennel as a side dish. And then the idea came to me to combine these two ingredients and prepare a single recipe. I simply breaded both the fennel slices and the cod bites and then baked them. The result was truly special: both the cod and the fennel turned out soft on the inside and crispy on the outside. A fish-based main course that won over my small family. Ingredients for Baked Cod with Fennel

  • 3 fennel
  • 1.1 lbs cod (fillets or bites)
  • 1/2 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 2 tbsps extra virgin olive oil
  • to taste salt
  • 2 pinches pepper

How to Prepare Baked Fennel and Cod

  • Clean the fennel by removing the stalks, the base, and the damaged outer leaves. Then cut the fennel in half and then into slices. Also, cut the cod fillets into small pieces. You can use either fresh or frozen cod; in the latter case, let it defrost thoroughly first.

  • Pour both the fennel and the cod bites into a bowl. Add 3 tablespoons of olive oil and mix with 2 spoons to coat both the fennel and the fish well. Now add the breadcrumbs, grated cheese, pepper, and a pinch of salt.

  • Mix again with the spoons to adhere the coating to both the fennel and the fish. Transfer everything to a greased baking dish in a thin layer and oil the surface. Cook the Baked Cod and Fennel in a preheated static oven at 375°F for 25-30 minutes.
