Ingredients for the Pumpkin Cutlets

  • 10 1/2 oz pumpkin (cleaned)
  • 1 3/4 oz grated parmesan
  • 1 white onion (medium)
  • 1 1/3 tbsp extra virgin olive oil
  • 1 tsp aromatic herbs
  • 2 1/8 oz breadcrumbs
  • to taste salt
  • 1 pinch pepper

What you need to prepare the Pumpkin Cutlets

How to prepare the Pumpkin Cutlets

  • Clean the pumpkin by removing the skin, seeds, and fibers. Cut it into small cubes. Pour 1 1/3 tablespoons of olive oil into a pan, add the cleaned and thinly sliced onion and the pumpkin.

  • Salt and cover with a lid. Let it cook on medium heat for 10 minutes, stirring frequently with a wooden spoon. Pour the cooked pumpkin into a bowl and mash it with a fork to make a puree.

  • It’s okay if there are some larger pieces of pumpkin. Add the chopped aromatic herbs, a pinch of pepper, and the grated parmesan. Mix and add 1 oz of breadcrumbs. Mix well.

  • Now form the Pumpkin Cutlets: take a portion of the mixture and flatten it between your hands. You can make them larger or smaller as you prefer. Dip them in breadcrumbs and lay them on a greased baking sheet or lined with parchment paper. Form all the Pumpkin Cutlets in the same way.

  • Slightly oil the surface. Cook the Pumpkin Croquettes in the air fryer at 374°F for 15-16 minutes. Alternatively, you can cook them in a preheated oven at 374°F in static mode for 18-20 minutes.
