Crispy potato sticks baked in the oven or in an air fryer. The recipe I want to tell you about today is a simple and delicious potato side dish. Practically only 2 ingredients and in just a few minutes you can prepare the best potatoes you’ve ever tasted. The only longer preparation in this recipe is just boiling the potatoes, but you can do this in advance or even cook them in the microwave, but then you just toss them in water and they cook on their own. Drain them well, mash them with a potato masher, and voilà… add the potato starch and prepare some delicious Potato Sticks. For cooking, you can choose to bake them in the oven as I did, use the air fryer, or if you want to indulge, you can fry them for extra crunchiness. - 1 lb potatoes
- 1/3 cup potato starch
- to taste salt
- to taste extra virgin olive oil

How to prepare Crispy Potato Sticks
Peel the potatoes. Wash them, cut them into cubes, and let them cook in boiling water for about 30 minutes. Test the doneness of the potatoes by piercing them with the prongs of a fork. Drain them and let them cool.
Mash the potatoes with a potato masher. Add a pinch of salt and the potato starch. Mix well with a fork. With slightly oiled hands, take a bit of the mixture and roll it into a stick shape.
Prepare all of them and arrange them one by one on a baking sheet lined with parchment paper. Oil them on the surface and bake the Potatoes in a preheated static oven at 375°F for 16-18 minutes.

If you prefer, you can cook them in an air fryer at 356°F for 15 minutes
