Bruschetta with grapes and stracchino perfect for a special appetizer. The recipe I want to share with you today is for delicious bruschetta with stracchino, grapes, and walnuts. Today I prepared some bruschetta using multigrain bread and then topped them with creamy stracchino, black grape berries, and walnut kernels. I found this combination of aromas and flavors perfect, perhaps leaning more towards sweet than savory, but it was very much liked by other members of my small family. For the bread, I used slices of good multigrain sandwich bread that I bought at my trusted bakery, but you can opt for slices of homemade bread or any bread you prefer, although I find it goes perfectly with more rustic bread like whole wheat or multigrain. For the grapes, black grapes are perfect, slightly more tart than white ones, although it mostly depends on personal taste. So, have I already convinced you to try them? Ingredients for Bruschetta with Grapes
- 8 slices whole grain multigrain bread
- 9 oz stracchino cheese
- 1 bunch black grapes
- 1.4 oz walnut kernels
- 2 pinches pepper
- 1 sprig rosemary
How to Prepare Crostoni with Stracchino and Grapes
Cut the bread into slices about 0.3 inches thick. Place the bread slices on a rack and let them toast in an air fryer at 374°F for 6-7 minutes. If using a traditional oven, increase the time to 8 minutes. But, if you prefer, you can also grill the bread slices on a stovetop grill.
Wash the bunch of grapes. Separate the berries and cut them in half, removing any seeds. Spread stracchino cheese on the toasted bread slices. Place the grape halves on top, cut side down.
Add a pinch of pepper, small pieces of walnut kernels, and chopped rosemary. Put the Bruschetta back in the air fryer or oven and cook for 4-5 minutes, just enough to melt the cheese.

For a stronger flavor, you can replace stracchino with gorgonzola-mascarpone or taleggio
You can add a drizzle of honey on the bruschetta after cooking
