Ingredients for Baked Eggplant Meatballs
- 14 oz eggplants
- 1 clove garlic
- 1/2 cup breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1.75 oz bread crumbs
- 1 egg
- to taste extra virgin olive oil
- 1 sprig parsley
- to taste salt
- 1 pinch pepper
How to Prepare Eggplant Meatballs
Wash the eggplant. Remove the stalk and the base and without peeling it, cut it into thick slices and then into cubes.
Pour 2-3 tablespoons of oil into a pan. Add a clove of garlic and the diced eggplants.
Cook the eggplants over medium heat for 8-10 minutes, stirring often with a wooden spoon. Remove the garlic clove and let them cool. Transfer the eggplants to a bowl and simply mash them with a fork, they don’t need to be completely mashed
Add a pinch of salt, the chopped parsley, and grated Parmesan cheese.
Add an egg and the bread crumbs in small pieces. Mix with a fork.
Add 3-4 tablespoons of breadcrumbs to firm up the mixture and mix well.
Form the meatballs. Take a small portion of the mixture and compact it between your hands. Roll them in breadcrumbs as you prepare them
Place the Eggplant Meatballs on a baking sheet lined with parchment paper. Drizzle a little extra virgin olive oil on top.
Cook the meatballs in a preheated oven at 375°F in static mode for 18-20 minutes.
For air fryer cooking: at 365°F for 16 minutes

For more flavorful meatballs, you can add cubes of soft cheese to the mixture, such as scamorza, caciotta, emmental, or asiago cheese
If you prefer, instead of baking or air frying them, you can fry them in hot seed oil
