Light and tasty eggplant parmigiana in an air fryer. The eggplant parmigiana is a classic recipe that always wins everyone over at the table. And we know that traditional recipes do not allow for upheavals and are almost perfect as they have been handed down to us for years. But today I wanted to try making a light eggplant parmigiana, without frying and without eggs but equally special. Nowadays, almost every household has an air fryer, a small appliance that allows us to cook in less time and with less fat. Well, traditionalists will frown at this version of mine and they are right because the classic eggplant parmigiana is unbeatable by any other version. But “swimsuit season” is approaching and we certainly can’t be caught unprepared, so no frying and let’s prepare unfried eggplant parmigiana that is just as delicious. And if you don’t want to turn on either the oven or the fryer, which in truth I consider more like a small convection oven, I recommend not missing the recipe for my skillet eggplant parmigiana. Ingredients for Air Fryer Parmigiana

  • 25 oz eggplants
  • 1 1/4 cups tomato sauce
  • 10 1/2 oz mozzarella
  • 2 3/4 oz grated Parmesan cheese
  • as needed extra virgin olive oil
  • as needed salt
  • 1 clove garlic

How to Prepare Eggplant Parmigiana Cooked in an Air Fryer

  • Wash the eggplants. Trim the ends and, without peeling them, cut them into thin slices. Arrange the eggplant slices side by side on the racks of your air fryer or in a baking tray. Brush the surface with extra virgin olive oil. Adjust according to the size of your air fryer and proceed by cooking the eggplants in one or more batches.

  • Cook the eggplants in the air fryer at 392°F for about 10 minutes. While the eggplants cook, prepare the tomato sauce. Pour 2-3 tablespoons of extra virgin olive oil into a saucepan. Add a clove of garlic and let it sauté for a minute over low heat.

  • Pour the tomato sauce, also add 3-4 tablespoons of water, and adjust the salt. Let the sauce cook over medium heat for 7-8 minutes, stirring often with a wooden spoon. Pour 3-4 tablespoons of sauce to cover the bottom of a baking dish. Make a layer of eggplant slices, slightly overlapping them.

  • Distribute slices of mozzarella and a sprinkle of grated Parmesan cheese on top. Cover with a few tablespoons of sauce. Continue the preparation with more eggplant slices and proceed in the same way until you finish the ingredients.

  • Finish with a layer of eggplants cooked in the air fryer. Smother them with the tomato sauce and a generous sprinkle of grated Parmesan cheese. Cook the eggplant parmigiana in your air fryer at 374°F for 18-20 minutes.
