Ingredients for Fried Eggplants

  • 1 lbs eggplants
  • 2/3 cup rice flour
  • 3/4 cup water (cold)
  • 1 teaspoon baking soda
  • 1 1/4 cups vegetable oil (for frying)

How to Prepare Fried Eggplant Sticks

  • Clean the eggplants. First, cut them into slices about 0.25 inches thick and then into sticks of the same size. Now prepare the batter. Pour the rice flour into a bowl and also add the baking soda.

  • Gradually add the cold water while continuing to mix with a whisk. You should obtain a smooth and thick batter. Heat plenty of vegetable oil in a small, deep pan.

  • With the help of kitchen tongs, dip the Eggplant Sticks first into the batter and then into the hot oil. Let them brown well on all sides.

  • Remove the eggplants and let them dry on paper towels. Enjoy them while they are still hot and crispy.
