With fennel today I want to share a very simple and very quick recipe: Crispy oven-baked fennel. Without pre-cooking them I breaded them with cornmeal for extra crunch. Ingredients for oven-baked fennel
- 2 fennel bulbs
- 3/8 cup fine cornmeal (fioretto)
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- as needed extra virgin olive oil
- as needed salt
How to prepare Fennel with cornmeal
Clean the fennel by removing the outer layers, the stalks and the toughest part of the base. Rinse under running water. Slice into thin slices. Pour the milk into one bowl and in another bowl mix the grated Parmesan and the cornmeal.
Dip the fennel slices in the milk and then coat them with the cornmeal on all sides. Arrange the fennel slices as you prepare them on a large baking tray lined with parchment paper.
Sprinkle a little salt on top and drizzle with extra virgin olive oil. Bake the fennel in a conventional oven at 374°F for 20 minutes or in an air fryer at 356°F for 16-18 minutes.
