Ingredients for Mini Yogurt Plumcakes

  • 2 eggs
  • 3/8 cup sugar
  • 1 container plain yogurt (125 grams)
  • 1/4 cup butter
  • 1 1/2 cup flour
  • 1 lemon zest (untreated)
  • 1/2 packet baking powder (8 grams)
  • 0.1 cup sugar sprinkles

  • Mixer
  • Plumcake Molds

How to prepare Yogurt and Lemon Plumcakes

  • Beat the 2 whole eggs with the sugar using an electric mixer for 6-7 minutes, until you have a light and fluffy mixture.

  • Wash the lemon and grate the zest. Add the lemon zest to the batter. Also add the melted butter and a container of plain yogurt. Mix.

  • Add the sifted flour and baking powder. Mix well.

  • To prepare the Mini plumcakes, you can use small disposable molds or a single mold with the appropriate holes. Oil the molds and fill them halfway with the batter. I made 8.

  • Decorate the plumcakes with sugar sprinkles. Bake the Lemon Plumcakes in a preheated oven at 356°F in static mode for 25 minutes. Always do the “toothpick test” to check the internal cooking.

The plumcakes remain soft and fluffy for 2-3 days in a container or a food bag. You can also freeze them

If you prefer, you can substitute the butter with 50 ml of seed oil or rice oil
