Ingredients for Fried Anchovies
- 1.1 lbs anchovies
- 2 eggs
- 1/2 cup flour
- 1.5 cups vegetable oil (for frying)
- to taste salt
How to Prepare Fried and Golden Anchovies
Clean the anchovies well by scaling them if necessary, removing their heads, opening them along the belly, removing the bones, taking out the innards, and washing them thoroughly. You will have obtained anchovy fillets. Let them drain on paper towels.
Coat the anchovy fillets in flour, making it adhere all over. Beat the eggs with a pinch of salt in a bowl. Heat the vegetable oil in a small, deep pan. To test the oil’s temperature, insert the handle of a wooden spoon, and when lots of bubbles form around it, the temperature is right.
Dip the floured anchovies in the eggs and plunge them directly into the hot vegetable oil. Let them brown on all sides. Remove them with a slotted spoon and let them drain on paper towels. Fry them all. Enjoy them with some lemon juice or as is.
