Ingredients for the Baked Chicken
- 1 chicken (about 2.2 lbs)
- 2.5 oz lard
- 2 tablespoons herbs
- 1/2 lemon
- 3 tablespoons honey
- to taste salt
- 2 pinches pepper

How to prepare the Baked Chicken
First, prepare the chicken. Score the chicken on the breast side and with a knife or poultry shears, cut the breastbone and spread it open with your hands. I used an already cleaned and eviscerated chicken, but if needed, clean it inside.
Rub the chicken all over with lard. To avoid getting your hands dirty, I recommend using disposable gloves. Salt it and sprinkle it with herbs on the inside. Place it on a baking pan greased with lard.
Salt it on the outside as well. Sprinkle it with herbs and a pinch of pepper or some chopped hot pepper. Cook the roast chicken in a preheated ventilated oven at 392°F for 40 minutes. Remove the chicken from the oven, leaving the oven on.
Mix honey with lemon juice in a small bowl. Spread the surface with honey and lemon and put it back in the oven for another 3-4 minutes, setting the oven to grill. This way, a delicious and irresistible crispy crust will form. Serve the chicken hot with a side of baked potatoes or a fresh salad.
