Ingredients for Grilled Zucchini
- 1.1 lbs zucchini
- 2 tbsps extra virgin olive oil
- 2.7 tbsps lemon juice
- 2 cloves garlic
- 1/2 tsp salt
- 1 sprig parsley
How to Prepare Grilled and Marinated Zucchini
Wash the zucchini. Trim the ends and slice them very thin along the length. I used a vegetable peeler to get very thin slices. Heat a grill and grill the zucchini slices on it.
It will only take a few minutes. Arrange the grilled zucchini on a large serving platter, overlapping them slightly. Mix the extra virgin olive oil with the salt and the juice of a lemon in a small bowl. Also, add the finely chopped garlic cloves.
Pour this dressing over the grilled zucchini. Finish with the chopped parsley. Cover the plate with plastic wrap and let the zucchini marinate for at least an hour.

Loredana’s Tips
You can prepare the marinated zucchini well in advance and store them in the fridge. Alternatively, you can simply grill them and season them just before serving.
You can replace parsley with mixed herbs or fresh basil.
If you prefer, you can replace the lemon juice with 3-4 tablespoons of white vinegar.
