Homemade apple butter without sugar and delicious. I stumbled upon this recipe some time ago, and it immediately intrigued me. It’s a sugar-free apple compote that is quick to prepare and perfect for using in many different ways. It’s delicious simply spread on bread or toast for breakfast, for filling pies, cookies, or many desserts, but also just eaten by the spoonful directly from the jar! It’s called “butter” because it has the same creamy consistency and like butter, it can be used in many ways, even to naturally sweeten hot beverages like tea, herbal teas, and milk. I didn’t add sugar because it’s not necessary; apples naturally contain fructose, but if you want a sweeter preparation, you can add a bit of granulated sugar or brown sugar. Apple butter is a delicious and light cream, very versatile and suitable for preparing both sweet and savory recipes; I recommend trying it with cheese or roasts. Apple butter takes its name from the translation of apple butter, a very famous preparation abroad and still little known in Italy.
Its smooth and soft consistency resembles that of butter, but it is a healthier and lighter preparation. Few and simple ingredients, only apples, water, and spices for an exceptional result. As spices, I only used cinnamon, but you can use nutmeg, ginger, and/or cloves. And if you’re lucky enough to have untreated apples, you don’t even have to peel them first. - 1 lb lbs apples
- 1/3 cup water
- 1/2 lemon (the juice)
- 1/2 teaspoon ground cinnamon

How to prepare Apple Compote
Peel the apples, clean them and cut them into cubes. Transfer the apples to a saucepan. Add the juice of half a lemon, water, and cinnamon. Bring the saucepan to the heat and cook the apples over very low heat for about an hour.
Stir them often with a wooden spoon. At the end of cooking, reduce the apples to puree with the help of an immersion blender.
Transfer the Apple Butter and Cinnamon into 2 clean and sterilized jars. Seal them and let them cool. The Apple Compote keeps in the fridge for a week. If you proceed with sterilization, you can keep it for 2-3 months.
