Hunter’s Style Chicken in a Pan for a tasty and flavorful main course. How much I love chicken, and I always prepare it in many different ways, but the recipe that is absolutely my favorite is the Hunter’s Style Chicken. Maybe because my mom always made it too, even with a few ingredients less, and when I want to prepare chicken, my choice always goes to this recipe. A crispy chicken outside and tender inside, immersed in a tasty and delicious sauce that will be impossible not to mop up with bread. I used chicken thighs cut into pieces, but if you prefer, you can also use only drumsticks, thighs, or a whole chicken cut into pieces. It is simple to prepare and then let the chicken cook long in the pan for a guaranteed successful main course that everyone always enjoys. Ingredients for Hunter’s Style Chicken
- 2.2 lbs chicken thighs
- 1 carrot (small)
- 1 onion (small)
- 1 stalk celery
- 9 oz tomatoes
- 3/4 glass red wine (about 180 ml)
- 4 fillets anchovies in oil
- 20 black olives
- 1 1/3 tbsp extra virgin olive oil
- 1 clove garlic
- 4 leaves bay
- 1 sprig rosemary
- to taste salt
How to Prepare Hunter’s Style Chicken in a Pan
Clean the celery, carrot, and onion and cut them into very small cubes. For convenience, you can use a Pre-made sauté mix, I always have it in the freezer. Pour 3-4 tablespoons of extra virgin olive oil into a large pan. Add a clove of garlic, the chopped vegetables, and the anchovy fillets.
Let it sauté for a minute over low heat and add the chicken pieces to the pan in more or less large pieces, as you prefer. Let the chicken cook on all sides over medium heat, turning it after a few minutes. Now pour in the red wine and let it evaporate over medium heat.
Wash the tomatoes and cut them into small pieces. Add the bay leaves, the chopped rosemary sprig, the black olives, the tomatoes, and adjust the salt to the chicken. Cover the pan with a lid and let it cook on low heat for about 40-45 minutes. The Hunter’s Style Chicken is ready… and get the bread ready for mopping up the sauce!

If there is leftover Chicken, keep it in the fridge in a container for 2 days, or you can also freeze it
You can replace the red wine with white wine and the fresh tomatoes with the same quantity of canned tomatoes
