This recipe is from my mother-in-law Adriana, and I used a pressure cooker just like she did, but if you prefer, you can also cook it in a pan, I’ll explain how the cooking times change. I used pork loin as the meat, but you can also use veal or beef following the same recipe. A pressure cooker roast that you can prepare in advance and just heat up before serving. The cooking in milk makes the meat super tender and delicious, and by blending the cooking juices, you get a delicious creamy sauce perfect to enjoy with the meat. Ingredients for Milk Pork Roast
- 2.2 lbs pork loin
- 4 tbsp extra virgin olive oil
- 1 carrot
- 1 stalk celery
- 1 white onion (medium)
- 4.2 cups milk
- to taste salt
- A few leaves bay leaves
What you need to prepare Pork Loin in Milk
- Pressure Cooker
- Immersion Blender
How to prepare Milk Pork Roast
Peel the carrot and cut it into small cubes. Clean the onion and cut it into cubes as well. Wash the celery stalk and dice it. Place the vegetables in a pressure cooker. Add the olive oil and the pork loin. Let the vegetables sauté and the meat brown over medium heat for 4-5 minutes.
Pour the milk over the meat covering almost all the loin. Add a pinch of salt and 4-5 bay leaves. Close the pressure cooker and wait for the characteristic whistle over medium heat. Lower the heat and let the Roast cook for about 40 minutes from the whistle.
If you don’t have a pressure cooker or don’t want to use it, use a pot and proceed in the same way. After adding the milk, let it heat up, lower the heat, and let it cook for about 90 minutes.
At the end of cooking, transfer the meat to a cutting board. Blend the cooking juices. Serve the Pork Roast sliced more or less thinly, as you prefer, accompanied by the sauce.
