They are soft cookies with a delicious rustic flavor that wins over with the first bite. To prepare these cookies, I used oat flour and oat flakes, naturally gluten-free and rich in fiber. And then lots of chocolate chips make them as delicious as the famous cookies but certainly lighter and healthier. To prepare the Oat and Chocolate Cookies, I did not use butter but olive oil for a more rustic result, perfect even if you have lactose intolerances. Ingredients for Oat and Chocolate Cookies
- 1 egg
- 3.5 tbsp extra virgin olive oil
- 2 tbsp oat milk (or cow's milk)
- 1/3 cup brown sugar
- 1 cup oat flour
- 1 cup oat flakes
- 3/4 cup dark chocolate
- 1 tsp baking powder
- 1 pinch salt
How to Make Oat and Chocolate Cookies
Pour an egg, olive oil, and oat milk into a bowl. Simply mix with a fork. Add the brown sugar and mix well.
Add the oat flour, oat flakes, and chopped dark chocolate. Continue adding to the dough a teaspoon of baking powder and a pinch of salt. Mix the dough well.
Transfer the dough to the fridge for 30 minutes. This will firm it up, making it easier to prepare the Oat Cookies. Take the dough and form the Cookies.
Take a portion of dough and roll it between your hands. Place the Cookies as you prepare them side by side on a baking tray lined with parchment paper.
Bake the Oat and Chocolate Cookies in a preheated oven at 356°F (180°C) for 15-16 minutes. Let the Cookies cool before transferring them to a plate or tray, as they are still very soft right out of the oven.
