Ingredients for the Orange Doughnuts

  • 1 egg
  • 2.82 oz sugar
  • 1 orange (untreated)
  • 7.05 oz ricotta
  • 9.88 oz flour
  • 1/2 packet baking powder (7 grams)
  • 1 1/4 cups vegetable oil
  • 1.41 oz sugar

How to prepare the Orange and Ricotta Doughnuts

  • To prepare this dessert, choose an untreated orange so that you can use both the zest and the juice. Beat an egg with the sugar in a bowl.

  • Add the zest and juice of one orange (about 2.5-2.8 oz).

  • Add the ricotta and simply mix with a fork.

  • Finally, add the sifted flour and baking powder. Mix first with a fork and then with your hands. You need to obtain a soft but not sticky dough. Let the dough rest for 30 minutes.

  • Transfer the dough to a floured work surface. Detach portions of dough and roll them on the surface to form rolls. Cut pieces about 4-5 inches long.

  • Close them at the ends by pressing to adhere the dough and form the doughnuts. Continue in the same way until you run out of dough.

  • Now all that’s left is to dip them a few at a time into the boiling vegetable oil, letting them brown well on all sides. Remove them with a slotted spoon and let them drain on paper towels.

  • Roll them in granulated sugar while they are still warm and then all that remains is to taste them and let them win you over at the first bite.
