Ingredients for the Oven-Baked Gratin Pumpkin

  • 1.1 lbs pumpkin
  • 1.8 oz black olives
  • 7 oz cherry tomatoes
  • to taste extra virgin olive oil
  • 1.4 oz grated Parmesan cheese
  • 1 tablespoon oregano
  • to taste salt

How to Prepare Oven-Baked Pumpkin with Cherry Tomatoes and Olives

  • Clean the pumpkin. Remove the rind, seeds, and inner fibers. Cut it into slices. Transfer the pumpkin slices into a bowl. Add the black olives in slices and the washed cherry tomatoes cut into 4 parts.

  • Add a pinch of salt, oregano, and a drizzle of extra virgin olive oil. Mix with 2 tablespoons. Transfer everything into a baking dish. Add the grated Parmesan cheese on top and drizzle again with extra virgin olive oil.

  • Cover the baking dish with aluminum foil or parchment paper. Bake the pumpkin in a static oven at 375°F for 15 minutes. Uncover the baking dish and continue cooking for another 10 minutes. You can also set the oven to grill at the end.

If you use an air fryer or a fan oven for baking, proceed the same way setting a temperature of 356°F-365°F for 20 minutes

If you prefer, you can replace oregano with the aromatic herbs you prefer, such as thyme, basil, or rosemary
