Pandoro with ricotta, chocolate, and candied fruits is the perfect dessert for Christmas. Today I want to tell you a recipe to turn a few slices of pandoro into a delicious and special treat for the Holidays. I prepared a ricotta cream with candied fruits and chocolate chips and then cut pandoro discs with a cookie cutter. All you need to do is assemble the dessert, and you’ll have the perfect dessert to present to family and friends. I know that Pandoro is already good on its own, slightly warmed in the microwave or, as grandma used to do, on the radiator and then sprinkled with lots of powdered sugar. But sometimes you want a different treat or have leftover pandoro filling the house, and with this recipe, they will turn into a wonderful dessert. Ingredients for Pandoro Cakes
- 14 oz pandoro
- 1 1/4 cups ricotta
- 1/3 cup sugar
- 1/3 cup candied fruits
- 1/3 cup chocolate chips
- 1 shot glass rum
- to taste powdered sugar (for decoration)
- 8 candied cherries
- 4 sticks candied citron
What you need to prepare Pandoro Cakes

How to prepare Pandoro with ricotta and chocolate
Mix in a glass rum, or another liquor, with the same amount of water. Cut slices from the pandoro about 0.6 – 0.8 inches thick. Use a mold or cookie cutter, or simply a glass, to cut out discs. I made treats with 3 pandoro discs, but you can also choose to make just 2.
Mix ricotta with granulated sugar in a bowl. Add finely chopped candied fruits and chocolate chips. Mix. Place 4 pandoro discs on a tray and brush them with the liquor.
Cover with a layer of ricotta cream. Continue with another pandoro disc; brush it with liquor. Continue with more ricotta cream and finish with another pandoro slice. Lightly brush with liquor.
Prepare all the Pandoro Cakes in the same way. Finally, decorate them with a sprinkle of powdered sugar, 2 candied cherries, and a strip of candied citron.
Keep the dessert in the fridge for at least 30 minutes. Remove it from the fridge a few minutes before serving.
