Parmesan gratinated fennel baked in the oven in a few minutes. This year I’m having big meals of fennel! So good and versatile, they are always suitable for making a lot of recipes. Even though they are excellent raw simply in salads, unfortunately, I can only digest them when cooked, so I like to always try new recipes. The recipe I want to share with you today is for crispy and delicious oven-baked gratinated fennel. Just slice the fennel very thinly and then sprinkle them with a breading and straight into the oven. They are perfect for a tasty and simple side dish or even a light main course. Ingredients for Oven-Baked Gratinated Fennel
- 2 fennel bulbs
- 1/2 cup grated Parmesan cheese
- 1/3 cup breadcrumbs
- as needed extra virgin olive oil
- 1 sprig parsley
- to taste salt
How to Prepare Oven-Baked Fennel
Clean the fennel bulbs. Remove most of the stalks, the tough base, and the most damaged outer parts. Wash them under running water and let them drain. Slice the fennel into thin pieces.
Line a baking tray with parchment paper. Brush it with extra virgin olive oil. Arrange the fennel slices side by side on the tray. Salt them. Cover the fennel with breadcrumbs and grated Parmesan cheese. Finish with chopped parsley and finally a drizzle of extra virgin olive oil.
Cook the fennel in a hot oven at 374°F in static mode for 20 minutes. If you prefer, you can cook them in an air fryer at 365°F for 16-18 minutes.

Loredana’s Tips
If there are leftover fennel, store them in a container in the fridge for 1-2 days. You just need to reheat them for a few minutes in the oven, in the air fryer, or the microwave.
For more flavorful fennel, you can add capers, chopped anchovy fillets, and/or cherry tomatoes to the breading.
