Ingredients for Parmesan Potatoes
- 1.1 lbs potatoes
- 2 oz grated Parmesan
- to taste extra virgin olive oil
- to taste salt
How to prepare Potato Balls
Peel the potatoes, wash them, and cut them into pieces. Boil the potatoes in boiling water for about 20 minutes. Test the doneness of the potatoes by piercing them with the prongs of a fork. Drain the potatoes.
Mash the potatoes with the help of a potato masher in a bowl. Add a pinch of salt and the grated Parmesan. Mix well with a fork.
Now form the Parmesan potato balls. Take a small portion of the mixture and compact it and roll it between your hands. As you prepare them, place them side by side on an oiled baking tray.
Add a drizzle of EVO oil on top. Cook the Potato Croquettes in the preheated oven at 375°F for 20-22 minutes.
