Ingredients for Parmesan Baked Potatoes
- 1.1 lbs potatoes
- 2 oz grated parmesan
- to taste salt
- 1 tbsp extra virgin olive oil

How to prepare Crispy Baked Potatoes
Peel the potatoes and wash them. Use a coarse grater to shred the potatoes into thin strips inside a cotton cloth placed in a bowl.
Once grated, close the cloth and squeeze it to remove the water from the potatoes. Transfer the grated potatoes into a bowl.
Add a pinch of salt and the grated parmesan. Mix well with a fork. Line a baking tray with parchment paper.
With the help of 2 spoons, place small heaps of potatoes on the tray slightly apart. Flatten them well with the back of the spoon.
Prepare them all the same way until the mixture is used up. If your tray isn’t very large, you’ll need 2 trays. Oil the surface.
Bake the Cheese Potatoes in a hot oven at 392°F in fan mode for 15-16 minutes. If you want to use a static oven, continue baking for about 18-20 minutes.

Loredana’s Tips
The same recipe also lends itself to cooking in an air fryer at 392°F for 14-15 minutes. It is not suitable for pan frying or deep frying because the mixture is not compact before cooking
For a stronger flavor, you can replace the grated parmesan with the same amount of pecorino cheese, which will make the Potato Fritters tastier. In this case, I recommend using less salt
