Ingredients for Crunchy Baked Zucchini
- 1.1 lbs zucchini
- 1/2 cup parmesan (grated)
- as needed extra virgin olive oil
- 1/2 teaspoon salt
What You Need

How to Make Parmesan Zucchini Fritters
Wash the zucchini and trim one end. Place a cloth or cotton towel in a bowl. Use a large-hole grater to grate the zucchini into the towel. Once grated, close the towel and squeeze to remove all the excess water from the zucchini.
Transfer the zucchini to a bowl. Add salt and grated Parmesan. Mix well with a fork. Preheat the oven to 392°F. Line a baking sheet with parchment paper.
Take portions of zucchini and press them between your hands to compact. Arrange the Parmesan Zucchini mounds on the baking sheet. Once prepared, drizzle with a bit of extra virgin olive oil on top and bake in a static oven for about 20 minutes.
