Ingredients for Creamy Pasta with Sausage
- 11 oz pasta (any shape you prefer)
- 10.6 oz sausage
- 1 cup tomato passata
- 5 fl oz heavy cream (liquid) (about 1/2 cup + 2 tbsp)
- 1 white onion (medium)
- to taste extra virgin olive oil
- 1/2 glass white wine
- 1.4 oz grated Parmesan cheese (about 1/3 cup)
- to taste salt
- to taste pepper
- 1 small bunch parsley
How to prepare Pasta alla carcerata
Pour 3-4 tablespoons of extra virgin olive oil into a large skillet and add the peeled and very thinly sliced onion. Let it sauté over medium heat for about a minute. Add the sausage, removed from its casing and coarsely crumbled. Let it brown for a few minutes over medium heat, stirring with a wooden spoon.
Pour in the white wine and let it evaporate. Continue by adding the tomato passata and season with salt. Turn the heat down and let the sauce simmer for 10 minutes over low heat. Meanwhile, cook the pasta shape you chose in plenty of salted water. At the end of cooking, add the fresh cream to the sauce.
Drain the pasta al dente, reserving a little of the cooking water, and transfer it to the pan with the sauce. Mix well. If you need to make the dish creamier, add a few tablespoons of the reserved cooking water. Add the grated Parmesan, a pinch of pepper and the chopped parsley. Mix well and serve the pasta.

I used fresh liquid cream, but you can substitute it with cooking cream or with 140 grams of fresh spreadable cheese like Philadelphia (about 5 oz, roughly 1/2 cup).
Short pasta shapes are best suited for this recipe.
