Pasta with cherry tomatoes and stracciatella a simple first course and delicious. The recipe I want to tell you about today is a first course I prepared yesterday for lunch. Simple and delicious Tomato Pasta scented with basil, which I’ve made irresistible with some creamy stracciatella. Stracciatella is a fresh cheese typical of my region, made by hand-stripping mozzarella curd and mixing it with fresh cream. Ingredients for Tomato Spaghetti
- 11 oz spaghetti (or other pasta shape)
- 10.5 oz cherry tomatoes
- 7 oz stracciatella
- as needed extra virgin olive oil
- 2 sprigs basil
- 1 clove garlic
- as needed salt
How to prepare Pasta with cherry tomatoes and stracciatella
Wash the cherry tomatoes. Cut them into 2 or 4 parts. Pour 3 tablespoons of extra virgin olive oil, the garlic clove, and a sprig of basil into a large pan. Let it lightly fry on medium heat for a minute. This way, the basil releases all its aromas and flavors.
Add the cherry tomatoes as well. Season with salt and let them cook for 7-8 minutes, stirring occasionally and adding a few tablespoons of pasta cooking water for a creamier sauce.
While the sauce cooks, also cook the pasta. Drop the spaghetti into plenty of salted boiling water and let them cook for 8-10 minutes or as indicated on the package.
Remove the garlic clove. Drain the pasta and toss it directly into the pan with the sauce. Mix and add a few more fresh basil leaves. Serve the pasta by decorating each dish with 3-4 tablespoons of stracciatella.

If you can’t find stracciatella, you can replace it with crescenza, stracchino, or squacquerone
I added the stracciatella last, but you can also choose to add it before and mix it with the sauce and pasta for a super creamy result
