PASTA WITH FRESH SALMON super simple recipe without cream

Pasta with fresh salmon is a simple and very tasty first course. The recipe I’m telling you about today is a sea-scented first course and it’s really simple and very quick to make. I usually prepare salmon pasta using smoked salmon and adding fresh cream or spreadable creamy cheese. This time I wanted to use a fresh salmon fillet for a spectacular result. Maybe it’s because I really like baked salmon and salmon with potatoes and zucchini. I didn’t add cream, only a bit of the pasta cooking water to make the dish wonderfully creamy. For the pasta shape you can use either short or long pasta; fresh pasta is also perfect for this dish, like tagliatelle with salmon. Let’s run to the kitchen and prepare some delicious penne with salmon together.

Ingredients for Pasta with Salmon

  • 11 oz pasta (the shape you prefer (about 3 1/4 cups dry))
  • 1 fillet salmon (about 14 oz (400 g))
  • to taste extra virgin olive oil
  • 1/4 cup white wine
  • 1 sprig parsley
  • to taste salt
  • 1 pinch pepper

How to prepare Pasta with fresh salmon

  • Clean the salmon fillet, removing the skin and any bones. Then cut it into small cubes on a cutting board. Pour 3-4 tablespoons of extra virgin olive oil into a large skillet and add the salmon. Let it lightly brown over low heat, turning with a wooden spoon.

  • Add the white wine and let it evaporate over medium heat. Meanwhile, cook the pasta of your choice — I chose ridged penne. Drain the pasta al dente and add it to the skillet with the salmon.

  • Add a few tablespoons of the cooking water, a pinch of pepper and the chopped parsley. Stir over medium heat for 2 minutes and serve the Pasta with salmon.

Loredana’s Tips

If you have leftover salmon pasta, store it in a container in the fridge. You can reheat it in a skillet or in the microwave, adding a few tablespoons of milk or light cream.

If you prefer, you can deglaze the salmon with a shot of cognac or a splash of sparkling wine.
