I wanted to prepare the Pasta with shrimp and arugula and then realized that I had used it in another recipe just yesterday. So the idea came to replace the arugula with frozen spinach that I always have in my freezer. I must say the substitution was perfect, a truly exquisite pasta dish. For the pasta shape, I used linguine or bavette, but any other long or short pasta shape works well. Ingredients for Linguine with shrimp
- 11.29 oz pasta (linguine or another shape)
- 1.32 lbs shrimp
- 8.82 oz spinach, frozen
- 8.82 oz cherry tomatoes
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt
How to prepare Pasta with shrimp and spinach
To prepare this recipe, you can use either fresh or frozen shrimp, or replace them with prawns. I cleaned the shrimp, leaving the shell intact, and only removed the head, legs, and the black intestinal line. Wash them and let them drain. Let the spinach defrost.
Place a clove of garlic and the shrimp in a pan. Cook the shrimp for 3-4 minutes over high heat and add the cherry tomatoes, washed and quartered. Add the spinach and adjust the salt. Cook for 6-7 minutes, stirring occasionally and adding a ladle of pasta cooking water. At the end of cooking, remove the garlic clove.
Meanwhile, cook the pasta, linguine, or another shape, in plenty of salted water. Drain the pasta al dente and toss it directly into the pan with the sauce. Mix and serve
