Today I want to tell you how I prepared a simple and delicious pasta dish with cauliflower. Cauliflower is rich in properties, has very few calories, only 25 per 100 grams. Ingredients for Sicilian-style Pasta with Cauliflower
- 1 cauliflower (about 2.2 lbs)
- 320 g pasta (spaghetti or other pasta shapes)
- 30 g pine nuts
- 60 g raisins
- 6 fillets anchovy fillets in oil
- 40 g breadcrumbs
- 2 tbsp extra virgin olive oil
- to taste salt
How to Prepare Sicilian-style Pasta with Cauliflower
Clean the cauliflower by removing the outer leaves and core. Divide it into small florets and wash under running water. Let it drain. Soften the raisins in a cup of hot water.
Plunge the cauliflower into salted boiling water and let it cook for 12-14 minutes. Check the doneness by piercing it with a fork. Drain it using a slotted spoon, keeping the cooking water to cook the pasta.
Pour the olive oil into a large pan, add the thinly sliced onion, and chopped anchovy fillets. Let them sauté on low heat for 2 minutes, stirring often with a wooden spoon.
Add the cauliflower to the pan and simply mash it with a fork. You should get a sort of coarse cream. Stir and add the drained raisins and pine nuts.
Cook the pasta, whether spaghetti or another type, in the same water you cooked the cauliflower. Drain the pasta al dente and add it to the pan with the sauce. Mix well, adding some cooking water if necessary to make the dish creamier.
While the pasta is cooking, pour 2 tablespoons of olive oil into another pan, add the breadcrumbs and let it lightly toast for 2 minutes on medium heat, stirring with a wooden spoon.
Add the breadcrumbs to the pasta and mix. Serve the Pasta and cauliflower with a pinch of pepper if desired.

If you prefer, you can replace the onion with a garlic clove, removing it before mashing the cauliflower
For a more decisive flavor, you can add 2 chopped hot chilies to the sauce
