PASTA WITH YELLOW CHERRY TOMATOES the recipe for a simple and quick first course

Pasta with yellow cherry tomatoes, tasty and delicious. How good are yellow cherry tomatoes! They are always my favorites, even though I can’t always find them at the market or supermarket. They are perfect, especially for those who, like me, suffer from stomach acidity and reflux because they are sweeter than red cherry tomatoes and are free of acidity. They are both rich in antioxidants, but the yellow ones contain a higher amount.  Yellow cherry tomatoes, thanks to their sweet taste, are perfect to eat raw as well. The recipe I want to tell you today is for a simple and quick first course featuring sweet yellow cherry tomatoes. I recommend not missing the recipe for Spaghetti all’assassina and Spaghetti with zucchini. I prepared a very simple sauce with cherry tomatoes and then blended half of it for a special creaminess. The addition of black olives and a few basil leaves is the extra touch for a delicious dish in its simplicity. Ingredients for Spaghetti with Cherry Tomatoes

  • 11 oz spaghetti (or other pasta shapes)
  • 14 oz yellow cherry tomatoes
  • 2.5 oz black olives (pitted)
  • 1.4 tbsp extra virgin olive oil
  • 1 clove garlic
  • 1 sprig basil
  • to taste salt

How to prepare Pasta with Yellow Cherry Tomatoes

  • Wash the cherry tomatoes and cut them into 2 or 4 parts. Pour 1.4 tablespoons of evo oil into a large pan. Add a clove of garlic and the yellow cherry tomatoes. Season with salt and let it cook for a few minutes, stirring often with a wooden spoon.

  • After a few minutes of cooking, pour some tablespoons of water into the pan. Let it cook for another 4-5 minutes. Meanwhile, cook the pasta, spaghetti, or other shapes, in plenty of salted water. Transfer 2/3 of the yellow cherry tomato sauce into an immersion blender cup and blend it into a delicious yellow cream.

  • Drain the pasta al dente, reserving a little cooking water. Toss the pasta into the pan, add the cherry tomato cream, sliced black olives, and basil leaves. Mix well and, if necessary, to make the dish creamier, add some reserved cooking water.
