Creamy and exquisite pasta with zucchini cream and shrimp. I have a special relationship with zucchinis. In fact, today I want to tell you the recipe for a first course with zucchinis. A zucchini cream envelops the pasta with its sweetness to which I added some shrimp. The result is a very creamy pasta perfect for conquering everyone at the table, even those who do not like zucchinis too much. For the pasta shape, I chose penne but other shapes, both short and long, are fine too, even egg tagliatelle. Ingredients for Pasta with Shrimp and Zucchini
- 11 oz pasta (any shape you prefer)
- 4 cups zucchini
- 1.1 lbs shrimp
- 1 clove garlic
- 1 pinch pepper
- to taste salt
- 1 sprig basil

How to Prepare Pasta with Zucchini Cream and Shrimp
Wash the zucchinis, trim the ends and cut into small cubes. Pour 2-3 tablespoons of extra virgin olive oil in a pan. Add the garlic clove and zucchinis. Add a pinch of salt and let the zucchinis cook over medium heat for 7-8 minutes.
Remove the garlic clove and transfer the zucchinis into the cup of an immersion blender. Blend to obtain a delicious zucchini cream. Clean the shrimps by removing the head, the shell, and the black thread with the help of a toothpick. Wash them and let them drain.
Cook for 2-3 minutes over medium heat in the same pan where you cooked the zucchinis with a drizzle of extra virgin olive oil. Meanwhile, cook the pasta, any shape you prefer, in plenty of salted water. Drain the pasta al dente, reserving a bit of the cooking water.
Pour the pasta into the pan with the shrimps. Also add the zucchini cream you prepared and mix. Add a pinch of pepper and a little of the cooking water to make the dish super creamy. Finally, add a few basil leaves for a delightful aroma.

Loredana’s Tips
For a super creamy dish, you can add 100 ml of fresh cream or 80 grams of spreadable fresh cheese to the zucchini cream.
You can prepare the zucchini cream in advance and store it in the fridge in a container for 1-2 days or even freeze it.
For the shrimps, I used fresh shrimps, but you can also choose to use already cleaned frozen shrimps.
